Scottish Scones

Directions

    • 1-1/2 cups all purpose flour
    • 1-1/4 cups oatmeal (either quick cooking or regular rolled oats)
    • 1/4 cup sugar
    • 1 Tablespoon baking powder
    • 1 teaspoon cream of tartar
    • dash of salt
    • 10 tablespoons butter, melted (1 stick + 2 tablespoons)
    • 1/3 cup fat-free milk (can use 2% also)
    • 1 egg

    Preheat oven to 450 degrees. Mix flour, oatmeal, sugar, baking powder, cream of tartar and salt together.  Cut in butter.  Make well in dry ingredients.  Microwave butter until melted, add in milk and egg.  Stir to blend.  Add wet ingredients to dry ingredients and stir until dry ingredients are blended in.  Let this sit for about 10 minutes.  Pour out onto a silpat covered baking sheet and form into a circle that is about 1 inch thick.  Cut into 8 wedges and bake for about 12 minutes until lightly browned.

    Chef's note:  Chocolate chips do not go well in this scone recipe, but currants or raisins work.  We prefer it "straight" as written served with fresh jam or lemon curd.  Yum.
